The Andalucian cuisine has a marked Mediterranean influence, based on the quality of the raw materials and on the wonderful and always present, olive oil.

Another determining factor is the Arab influence that can be appreciated in many recipes and very especially in the pastry.
And the wines … the finos, manzanillas, and olorosos are famous beyond the frontiers and together with the gazpacho, “fried fish” or the delicious Jabugo ham, form part of the Andalucian identity.
